Y'all, this appetizer is an experiment turned DELICIOUS! Let me explain how it happened. I'm also the General Manager of a cooking school in Itasca, IL. We have an monthly collaboration at Cooking Skills Academy with Lynfred Winery, a local winery in Roselle, IL. Each month we change up the theme, but December was "Holiday Entertaining with Ease." Christina from Lynfred introduced two amazing wines and also created an exquisite charcuterie board (See below).
It was a huge hit and I had big shoes to fill, but next I taught the group how to make Bacon Wrapped Dates. Here's the recipe, and let me tell you, the fact that they are rolled in That Rub- Original (click HERE to buy) makes them even more amazing and sticky-sweet! The class participants could not stop raving about how good they are. A reminder: That Rub is NOT just for grilling and smoking! It can be used for appetizers, soups, drinks, even desserts! Ingredients:
1 pkg. thick sliced bacon
1 pkg. pitted dates
1 small block or container goat cheese
1/2 cup That Rub- Original
toothpicks
Instructions:
Preheat oven to 400 degrees. Stuff each date with goat cheese. Keep bacon in the fridge while you prep dates. Once finished, take out bacon and cut each piece into 3 equal parts. Wrap bacon piece around each date and roll in Original That Rub before securing bacon with a toothpick. Place on sheet tray or cookie sheet and bake for 20-30 minutes, until bacon is crisp and rub is sticky sweet. Let cool for a few minutes before serving. This is a great holiday appetizer or great for entertaining! Enjoy!
