Open Faced Salmon Melt


Ingredients:

1 fresh salmon filet

1 Tbsp. That Rub- Original Blend

1 tsp. oil

1 piece sourdough bread

1 Tbsp. mayonnaise

2 slices mozzarella cheese

3 slices tomato

1 Tbsp. pesto


Instructions:

Generously pack rub on all sides of salmon, then saute in pan with oil. Cook about 4 minutes per side, or until fish is done to your liking. Remove salmon from pan, toast both sides of sourdough in same pan, until golden brown. Top bread with mayo, cooked salmon, tomatoes and cheese. Broil until cheese is melted and begins to brown. Top with pesto and enjoy!
